Moto _ Chicago

I first stumbled upon Taste3 on youtube a while back.. and got introduced to Ben Roche from Moto restaurant in Chicago -> http://www.youtube.com/watch?v=ykWNHXfcL20 .

While molecular gastronomy has been around for some time (thanks to Ferran Adria..Heston Blumenthal etc), I found Moto's approach more down-to-earth if you may. Less sci-fi, more..this is just another form of cooking.

Liquid nitrogen as with all molecular restaurants seem to play a big roll in their kitchen (i.e the carrot cake from the link above), some pretty wacky gizmos also pop up like a class 4 co2 gas laser to vaporise aromatics into their wine glasses for food and wine pairings, as well as whimsical texture manipulation such as the liquid cotton candy white chocolate truffle paired with the cotton candy paper.
